Greek chicken burger > recipe October 24, 2006

Ingredients >
• 1 pound ground chicken meat
• 1/3 cup dried breadcrumbs
• 1 large egg
• 1 tbs chopped fresh oregano
• 1 tbs chopped fresh mint
• 3 tbs plain yogurt
• Salt and pepper
• 4 tbs crumbled feta cheese
• 4 pita rounds
• Sliced cucumber
• Sliced tomato
• Sliced red onion

Procedure >
Combine the ground chicken meat, dried breadcrumbs, egg and chopped herbs. Add the yogurt, feta cheese, season with a little salt and pepper and shape into 4 equal sized patties. There isn’t a lot of fat in a chicken burger so it’s important to oil the grill or spray it with a cooking spray before you place the patties on the grill. Cook them just like a regular burger and make sure they’re cooked all the way through without being totally dried out. Slice a pita round in half and use half for the bottom and the other for the top and top the burger with a slice of tomato, red onion and some sliced cucumbers.

Hints >
Substitute ground turkey. If you use dried herbs, use about 1/2-1 tsp each . If you don’t have yogurt, use 2 tbs lemon juice and 3 tbs milk. Use mayonnaise on the pita or lemon juice and olive oil on the veggies.

A new restaurant called Kokoras Greek Grill recently opened in Morgan Junction offering lunch and dinner. Specifically, the cuisine is from Corfu Island.

“Kokoras” is Greek for “rooster,” said Demetra Rouvas, who owns the new eatery along with husband Spiros. 

The Rouvas moved to Renton after immigrating from Greece and hoped to open a restaurant in either the Proctor District in north Tacoma or in West Seattle. “West Seattle was our getaway,” Demetra said. She and Spiros love going to Alki and Fauntleroy, she said. They looked for three years for a business location in West Seattle.

Hours: 11:30 a.m. to 8:30 p.m. Monday-Thursday; 11:30 a.m. to 9 p.m. Friday and Saturday.

Well, here’s some fresh gossip according to The Mirror, Brit newspaper, today’s issue.

Anything Paris Hilton can do, Lindsay Lohan can do later. And anything Linds can do, Paris wants to match.

On Saturday, La Lohan, 20, was partying with Greek shipping heir Stavros Niarchos, Ms Hilton’s ex-fiance, at Hyde club, LA.

Meanwhile, Paris, 25, had a new Greek hunk, Greco-American illusionist and rocker Criss Angel, at the Jet Nightclub in Las Vegas.

Yes, it’s all Greek to us, too…..although we are Greek! Any jet-set’s stars (?) after me? I’m a hunk and Greek too! Hahaha! 🙂
